Salmon Gravlax
INGREDIENTS
• 1 side of salmon, about two
pounds. Get the freshest
sushi grade salmon you
can. Tell your fishmonger
what you are doing with
it, and also ask him to pin
bone it for you.
• 2 unwaxed lemons
• 1 teaspoon of mustard
(Darren used English
mustard in this recipe, but
has also used Dijon/whole
grain)
• 25 grams of fresh dill
roughly chopped, stalks
removed
• 50 grams of sea salt
(ground in pestle and
mortar)
• 25 grams of caster sugar
• 1 tablespoon of
peppercorns (crushed in
pestle and mortar)
