Here are a couple things to consider if you need some more consumption encouragement (which is weird, but ok): • As you may have heard, avocados have a high fat content. Between 71-88% of their total calories is fat—about 20 x the average for other fruits. • You'll get 34% of your daily intake of fats (the good kind) from one whole avocado but also 40% of your daily fiber. • Eating avocados can help control blood sugar, regulate insulin, help with weight management, and decrease inflammation. What does that mean? It means that your skin is going to glow with plump vivacity, your organs are going to function on an optimal level, your cholesterol will drop and your body will love you. • Also, in case you forgot, avocados are delicious. They are like soft, sumptuous fruit butter that you can add to almost anything to increase its enjoyable edibility. So, to celebrate the awesomeness of the avocado and the history of guac, we put together a recipe to add some sunshine to your world as you practice your happy Cinco de Mayo dance. Easy Peasy Spicy Guac Ingredients: • 3 avocados • One small onion • Coriander • Sea salt • 2 jalapeño or poblano chile peppers • 2 small tomatoes • 1/4 cup lime juice Directions: Chop the onion, tomatoes and avocados into small cubes. Coat the avocados with half of the lime juice to prevent premature oxidation. (Guacamole should be of a nice green color!) In the molcajete/mortar, grind the chopped coriander, lime juice, chopped chiles and salt until you've created a smooth, well blended paste. This step will guarantee that your guacamole stands out from the crowd! Add avocados and grind well with stone pestle until achieving your desired texture. Mix in chopped onion, tomatoes and decorate with coriander leaves. Serve with tortilla chips. Notes: Use the jalapeño or poblano chile peppers depending on how hot you would like your guacamole to be. Poblanos are a milder but tasty alternative to hotter jalapeños. Don't be afraid of going a bit on the salty side. Because guacamole has few ingredients it's important that they're of the finest quality. Same goes for your chips!
