W hile bruschetta graces inspired menus across the globe, its culinary roots are far more pedestrian. Thought to have originated from Italian peasants using bread in lieu of plates during medieval times, bruschetta has certainly evolved well past its impoverished origins. Traditionally, garlic rubbed toast topped with tomatoes comes to mind when we think of bruschetta — but today's picnic perfect bruschetta's showcase sweet & savory along with light & creamy variations of the much loved Italian appetizer. Perfect for your picnic - just be sure to pack each topping separate from the bread to avoid the dreaded soggy factor. Enjoy! Perfect Picnic Pairings SUMMER STRAWBERRY BRUSCHETTA Combine an equal amount of strawberries and sugar in a bowl. Let sit overnight. Place the mixture in a pot and cook for 10 minutes. Spread the toasted bread with cream cheese, fresh strawberries and the warm strawberry syrup. BRUSCHETTE AL POMODORO TOMATO BRUSCHETTA) In a bowl, sprinkle chopped tomatoes with salt and olive oil. Place them in a pre-heated over for 10 minutes. Rub the warm toasted bread with a garlic clove. Top the toast with cream cheese, tomatoes and a pinch of parsley or basil. PEAR RICOTTA WALNUT BRUSCHETTA Top with ricotta cheese, pear and sprinkle with walnuts. Pretty simple right?
